Easy substitutions:

butter: Earth Balance, some varieties of Smart Balance (check the label for "vegan"

mayonaise: Veganaise
-
milk: soy, almond, coconut, hemp, hazelnut, rice, etc. milk (tip: use plain for savory, use vanilla for sweets)
-
sour cream: Tofutti "Sour Supreme" or "Better Than Sour Cream"
-
buttermilk: add 1 TB apple cider vinegar or white vinegar to a liquid measuring cup, add milk until 1 cup mark, mix and let sit several minutes - voila

sausage/meat: Field Roast brand is AWESOME. My favorite products: Field Roast, Tofurky Italian sausage, Tofurkey Peppered deli slices, Trader joe's vegan meatballs (frozen), Soyrizo or Trader Joe's vegan chorizo (both yum)
